Khao soi is the postcard. Sai ua is what a lot of Haze Buds staff actually hunt on a day off: coarse pork packed with lemongrass, makrut lime leaf, galangal, turmeric, and chili, then grilled until the skin blisters.
This is an unsponsored three-stop detour, not a ranking of every coil in the province. Hours move. Smell the grill before you commit.
What sai ua is
Sai ua (also written sai oua) is Lanna herb sausage. The filling should look green-flecked, not like a smooth breakfast link. The point is the herbs, then the charcoal.
You will meet it two ways:
- By the coil, sold by weight at a market stall
- On a plate, next to sticky rice, nam prik, and vegetables at a northern restaurant
Both are correct. One is a standing snack. The other is lunch.
It is not Isaan sour sausage and it is not a hot dog with chili sauce. If the stall cannot tell you it is sai ua, keep walking.
How the vote worked
We asked staff who close Old Town, Chiang Mai Gate, and Sridonchai a single question: where do you go when you want sai ua, not a full khantok show?
Filters:
- Still serving the herb sausage as a reason to stop
- Reachable from the city, not a countryside day trip
- Not a place we have already used for khao soi or khao kha moo
- No paid inclusion
Three answers covered most of the team: one market grill, one Old City plate, one sit-down northern house.
Stop 1 — Charcoal coil at Warorot
ไส้อั่วตรอกเล่าโจ้ว (Sai Ua Trok Lao Jo) sits at the mouth of Trok Lao Jo on the Warorot / Kad Luang side of town, east of the moat toward the river.
This is the “follow the charcoal” stop. You buy a piece of the coil, often with a short lunch window rather than an all-night grill. Confirm hours; several reports put it in the late-morning to early-afternoon band, which is useless if you arrive at 6 p.m.
What staff like:
- Actual charcoal smell in the soi
- Herbs you can see in the slice
- A takeaway wrap if you are heading back toward Sridonchai hotels
What staff warn:
- It can sell down
- It is a stall, not a restaurant
- Warorot is a working market. Watch bags and elbows
If Lao Jo is closed, the same building complex still has other sai ua names (Mae Ga Bua is the one people point to inside the fresh-food area). Ask for sai ua and look for the grill, not the English sign.
This stop pairs naturally with a Sridonchai day. It is a detour from Old Town, not a two-minute hop from Rajadamnern.
Stop 2 — A plated sausage in the Old City
When the team wants a chair and nam prik with the sausage, the Old City vote still goes to Huen Phen on Ratchamanka — the long-running northern room visitors already half-know.
You are not going there because it is secret. You are going because the sai ua arrives as part of a proper northern spread instead of a coil in newspaper.
What staff like:
- Sticky rice and dips in the same sitting
- A reliable lunch address inside the walls
- Easy walk from Chiang Mai Gate or a longer wander from Old Town
What staff warn:
- It is popular. Go earlier than your hunger peak
- You will be tempted to order the entire Lanna greatest-hits list. You do not need to. Get the sausage, a nam prik, and rice
- This is a restaurant bill, not a 60-baht coil
If Huen Phen is slammed, the same neighborhood has other northern rooms. The rule stays: plated sai ua with herbs you can smell, not a generic mixed grill.
Stop 3 — A sit-down northern house
For a slightly more composed plate, staff send people to Huen Muan Jai — a northern kitchen known for a Lanna starter spread that includes sai ua.
This is the “we have time and we want the sausage in context” stop. It is not next door to any Haze Buds branch. Budget a Grab.
What staff like:
- The sausage treated as one piece of a northern table, not a novelty
- A room that still feels like dinner rather than a stall
What staff warn:
- Check opening hours before you ride
- Do not stack this with Warorot and Huen Phen on the same afternoon unless you are writing a sausage thesis
If you only do two stops, do Warorot for the coil and one sit-down plate. The third is for a second evening.
How to eat it
- Eat it hot. Cold sai ua is a different, duller food
- Sticky rice is the correct utensil
- Nam prik noom or nam prik ong on the side if you have them
- Chili is already in the meat. Taste before you paint the plate red
Carry cash at the market. Carry patience at the restaurants.
This is pork. If you do not eat pork, this detour is not your detour.
Keep it separate from a shop visit
Eat sausage. Then, if you still want a licensed counter, go to the nearest Haze Buds branch as its own errand.
Do not take labeled flower to Warorot. Do not treat a northern table as a tasting room. Public use is not legal, and grilled lemongrass already owns the air.
Passport and PT33 belong to the shop visit. Sticky rice belongs to this one.
Conclusion
The staff sai ua map is short on purpose:
- Trok Lao Jo / Warorot — charcoal coil, market hours
- Huen Phen — plated sausage inside the Old City
- Huen Muan Jai — sit-down northern house when you have time
Smell the herbs. Eat it hot. Leave the product bag at the hotel.
FAQ
Is sai ua spicy?
It is herb-forward with chili in the mix. Heat varies by stall. Taste first.
Can I take a coil home on the plane?
Fresh grilled sausage is a bad travel companion. Eat it in Chiang Mai. Do not confuse it with sealed commercial snacks.
Which stop is closest to Haze Buds Old Town?
Huen Phen, on foot across the Old City. Warorot is closer in spirit to Sridonchai.
Is this the same as the khao kha moo staff vote?
No. Different dish, different doors.
Do I need to order a whole kilo?
No. Market stalls will cut a smaller piece. Restaurants sell a plate.
